Feng Shui for Health: Cheesy Kale Chips!

I’m currently doing a detox for a few months, removing dairy, soy, corn, wheat, eggs and sugar from my diet… WHEW! It’s a great way to identify subtle food allergies that can easily slow our energy, alertness and well being.

Taking time to work on the energy of your body is just as important as tending to your home. So here’s a fun and super-healthy recipe to try out this summer to help strengthen your immune system, boost your body’s energy and learn a way to eat green leafy veggies that will taste like a sinful treat.

1 large bunch of cleaned organic kale (you can cut out the stems if you prefer)
1 cup of soaked organic cashews
1 organic seeded red pepper
1 cup of nutritional yeast flakes (this adds the “cheesy” flavor)
Sea Salt to taste
Water (enough to wet the above ingredients so they blend well in a food processor).

Blend the ingredients in a food processor thick and liquidy – except the kale, of course! Then, in a large bowl, put the washed and stemmed kale leaves in the bowl and pour the liquid mixture over the leaves. Then, like you’re kneading bread, mold, squeeze, crush and squish the kale leaves in your hands until you’ve broken the leaves sufficiently to hold the liquid and have covered all sides of the leaves.

If you have a dehydrator, set it to a temperature under 115° and lay the leaves onto the dehydrator trays. You can also use your stove – just place the kale on a pan and set to a very low level. Over the next several hours the leaves will turn into crispy, cheesy, delicious treats! I usually make this at night and by the morning they’re all done – just place in a plastic ziplock bag or airtight container and eat when you desire a super-healthy, super-yummy snack! (if it gets soggy over time, you simply didn’t dehydrate it enough – just place it back in the over or dehydrator, and you’ll have crispy kale chips in no time).

Trust me, this is delicious enough that even your pickest eater will gobble them up. Healthy doesn’t have to equal boring!
